A CHEF from Conwy has made it through to the next round of BBC2's Great British Menu. 

Nick Rudge, who trained under Heston Blumenthal and has a restaurant in Conwy called 'The Jackdaw', impressed judges during Tuesday night's episode of the programme on February 20. 

Chefs were asked to present canapes, starters and fish dishes inspired by the Olympics and Paralympics. 

Nick served up a canape as well as starter 'Another Gold for Team GB' and fish dish '4,000 Metre Freestyle.'

Nick said 'Another Gold for Team GB' was inspired by Jade Jones, of Flint. Jade was the first to win a taekwondo gold medal in 2012.

New judge Tom Shepherd said to Nick about his dish - '4,000 Metre Freestyle': "I like the link with all the ingredients drawn from the 4,000 metre radius. Lobster claw was soft and nicely cooked, had a good flavour, the poached Lobster tail was slightly under for me.

"The lamb fat didn't come through enough with the leek. The dish has potential but it needs more excitement and cohesion on the plate." 

Nick is competing in the Welsh heats alongside Corrin Harrison from mid-Wales, who has spent most of his career at one of the UK’s best restaurants, Ynyshir, and has just set up a sister restaurant to it in Machynlleth; Lewis Dwyer, who recently opened his own place, Hiraeth, to critical acclaim and quickly earned 2 AA rosettes and Larkin Cen, from The Monkey King at Newport’s Celtic Manor. 

Last night saw Lewis eliminated from the competition.

Tonight (Wednesday, February 21), the remaining three Welsh chefs will compete over mains and desserts inspired by the Olympic and Paralympic Games.

The dishes include two that use pigeon and beetroot in very different ways, a take on London 2012's basketball arena, which was nicknamed the Marshmallow, and a recreation of Mount Olympus with flinty meringue and mousses. 

The chefs are competing for a place at the banquet, which this year will be held in Paris to wish Team GB 'good luck' for the Paris 2024 Olympic Games.
